The roots of The Dalmore date back to 1839, when Alexander Matheson founded the distillery on the shores of the rugged Cromarty Firth. Yet it was the Scottish Mackenzie clan that shaped the distillery s destiny and bestowed upon it its iconic emblem: the majestic twelve-point stag. According to legend, in 1263 an ancestor of the Mackenzies saved King Alexander III from an attacking stag. In gratitude, the clan was granted the right to bear the stag s head in its coat of arms. With the 25-year-old Dalmore, Master Distiller Richard Paterson - a living legend in the world of whisky - has created an aromatic tribute to this courageous heritage. His aim for the expression launched in 2013/2014 was to create a luxury malt that would once again surpass the already high standards of Dalmore s cask maturation.
The 25 years Dalmore Scotch Whisky is a symphony of casks and an extraordinary creation by the Dalmore master distiller, featuring a multi-stage maturation process thought through down to the very last detail. Richard Paterson orchestrated a journey through rare woods that is unrivalled in the world of whisky: the initial maturation began traditionally in ex-bourbon casks made from American white oak to shape the soft, fruity base notes of the distillate. The whisky was then divided. One part was allowed to mature in extremely rare, 25-year-old Palomino Fino sherry butts, the other in old first-fill bourbon casks from the 1980s. Following the harmonious blending of the matured distillates, the whisky received its final, refined touch and was finished in exclusive Portuguese Tawny Port pipes. The finish in port casks has influenced the taste just as much as the sophisticated ageing process. The so-called triple finish , with its demanding and unusual maturation process, has given the 25-year-old Dalmore Highland Single Malt Scotch Whisky a harmonious character with exceptional depth and an almost unbelievable richness of nuance - each cask contributing its own unique characteristics.
The result is a full-bodied, deep amber-coloured Dalmore Highland Single Malt Scotch Whisky that masterfully balances complexity, depth and opulent elegance, revealing on the nose a rich bouquet of exotic fruits, fresh vanilla pods, fig cake, marzipan, caramel and a gentle hint of tobacco leaves. The flavour is incredibly multi-faceted and wonderfully balanced, with notes of Madagascan vanilla, orange peel, liquorice, sherry, plums, raisins, thick caramel syrup and dark chocolate truffles; the finish is infinitely long and warming, with maple syrup, Demerara sugar, dark chocolate, spiced gingerbread, ginger and orange marmalade - a feast for the senses and a brilliant Dalmore in a class of its own!
