The Hibiki Premium Blended Whisky was launched in 1989 by the Japanese beverage company Suntory to celebrate its 90th anniversary. The name Hibiki means harmony in Japanese and was chosen to reflect the philosophy behind this premium Japanese whisky - a harmonious blend of different malts and grains that are in harmony with Japanese nature and craftsmanship. Whisky is an essential part of Japanese drinking culture and the Japanese are particularly meticulous when it comes to creating a work of art. The statement may come as a surprise, but it is easy to justify historically. Mr Torii, founder of the Suntory company, began producing whisky as early as 1924. The founder of Suntory, Shinjiro Torii, opened his first shop, Torii Shoten, which sold imported wines, in Osaka in February 1899. In 1924, he also began producing single malt whisky. It was during this time that the name Suntory was first used as a brand name. Today s distillery is located near Kyoto, a region with a varied climate and high humidity. When he built Japan s first distillery in the Yamazaki valley outside Kyoto, he could not have imagined in his wildest dreams what a promising future this whisky series would have. In 1929, he presented his first distillate under the name Shirofuda. Suntory Hibiki is one of the world s premium blends, typically consisting of malt whiskies from the Yamazaki and Hakushu distilleries and grain whisky from the Chita distillery. Suntory s master blenders carefully select whiskies from a variety of casks to achieve the desired complexity and harmony.
The Hibiki whisky is a master blend of carefully selected 35 full-bodied malt and grain whiskies that have rested for many years in different types of cask, ensuring its multi-award-winning complex flavour and a special taste experience. A special feature is the use of a wide range of cask types, including American white oak, Spanish sherry casks and - particularly characteristic of many Japanese whiskies - Japanese Mizunara oak. Mizunara oak is rare and difficult to work with, but gives the whisky unmistakable notes of sandalwood and incense.
