The title Book 3: Source Protector pays tribute to the legacy of Ian Hunter, the last owner and manager of the Laphroaig distillery, who belonged to the Johnston family, and his fight to protect the Kilbride stream. This story is about an unyielding dispute between neighbours over the water supply, the crucial livelihood of any distillery. This 33-year-old Laphroaig Islay single malt Scotch whisky was matured exclusively in ex-bourbon casks as a tribute to the legendary distillery manager and bottled in 2021 in an edition of 4800 bottles without chill-filtration at cask strength 49.9% vol.
The Scottish-born Ian Hunter was the last descendant of the founding Johnston family, led the fortunes of the Laphroaig distillery from 1908 to 1944 and is still considered one of Laphroaig s most important distillery managers today, as he made important changes to the production of the distinctive Islay malt, ensuring an expansion of the malting floors and doubling the stills from 2 to 4. He brought back the first bourbon casks from his travels in the USA, in which the whisky has been primarily matured since then.
