The Glenlivet distillery near Ballindalloch in Scotland s Speyside was the first legal distillery to be founded by George Smith under the 1823 Act of Excise, which caused the family to incur the displeasure of the entire neighbourhood at the time, as the illegal distilling of whisky had a long tradition in the area. However, the new law meant that the illegal distilleries almost completely disappeared within ten years. The current distillery was built in 1858. In 1880, the Smiths acquired the exclusive right to the name The Glenlivet. In 1977, the distillery was sold to the American Seagram alcohol group, which went to Pernod Ricard in 2001. The water for the Glenlivet distillery, which belongs to the Speyside region, comes from the Josies Well. The distillery has one mash tun (11.5 tonnes) and eight fermenters (472,000 litres in total). The distillation takes place in four wash stills (15,000 litres each) and four spirit stills (10,500 litres each), which are heated by steam. A new building then added another mash tun, six fermenters and three stills each. The art of whisky production lies, among other things, in choosing the right casks for the maturation of the whisky. For The Glenlivet, American and Spanish oak casks are used in which, for example, sherry or bourbon has already been matured and which give the whisky its own unique flavour. The still is the centrepiece of whisky production, and the shape is crucial to the character of the whisky. The lantern shape designed by founder George Smith is still used today for the production of this exceptional single malt whisky. The tall stills promote contact between the distillate and copper, remove impurities and allow the flavour elements to blend, giving Glenlivet Scotch Whisky a special quality. The character of Glenlivet is described as fine, very elegant and rich in floral aromas. Depending on the type of cask, other specific flavours can also be found and the malt whisky is known among connoisseurs and aficionados for its long-lasting, sometimes dry and mild finish. The Glenlivet single cask whiskies and the old bottlings with the distillery label by Gordon and MacPhail are particularly sought-after and are of exceptional quality.
